Ingredients
  

  • 2 ripe bananas mashed
  • 1 cup rolled oats
  • 1/2 cup almond flour or whole wheat flour
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips optional

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix Ingredients: In a large bowl, combine the mashed bananas, rolled oats, almond flour, honey, vanilla extract, baking powder, cinnamon, and salt. Stir until well combined. If using, fold in the chocolate chips.
  • Shape Cookies: Using a spoon or cookie scoop, drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake: Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  • Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a Vegan Version: Use maple syrup instead of honey and omit the chocolate chips if you prefer. You can easily freeze the cookie dough to make fresh cookies later—just freeze the dough balls and bake them directly from the freezer!
