Ingredients
  

  • 1 cup unsalted butter melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup semi-sweet chocolate chips
  • 1/2 teaspoon peppermint extract
  • 1 cup powdered sugar
  • 2 tablespoons heavy cream
  • 1/2 teaspoon peppermint extract
  • Crushed candy canes for garnish

Instructions
 

  • Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  • Prepare the Brownie Batter: In a large saucepan, melt the butter over medium heat. Remove from heat and stir in sugar until well combined. Beat in the eggs one at a time, then mix in the vanilla extract.
  • Mix Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually mix the dry ingredients into the wet mixture. Fold in chocolate chips and peppermint extract.
  • Bake the Brownies: Pour the batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool completely.
  • Prepare the Frosting: In a medium bowl, mix together powdered sugar, heavy cream, and peppermint extract until smooth. Spread the frosting over the cooled brownies.

Notes

For extra richness, use dark chocolate chips instead of semi-sweet. For a crunchy texture, add crushed peppermint candies to the batter. To store, keep brownies in an airtight container for up to 4 days.
