Ingredients
  

  • 2 cups rolled oats
  • 1 cup peanut butter smooth or crunchy
  • 1/2 cup honey or maple syrup
  • 1/2 cup chocolate chips optional
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts or seeds optional
  • Pinch of salt

Instructions
 

  • Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving an overhang for easy removal.
  • Mix the Ingredients: In a large bowl, combine rolled oats, peanut butter, honey, vanilla extract, and salt. Stir until well mixed. If using, fold in chocolate chips and nuts.
  • Press into the Dish: Transfer the mixture to the prepared baking dish and press it down firmly with a spatula or your hands to create an even layer.
  • Chill: Refrigerate for at least 1 hour, or until set.
  • Cut into Bars: Once chilled, lift the bars out of the dish using the parchment overhang. Cut into squares or rectangles and enjoy!

Notes

Store in an airtight container in the fridge for up to a week. Substitute peanut butter with almond butter or sunflower seed butter for a nut-free version. Add dried fruits like cranberries or raisins for extra flavor.
